My Homemade Cream Of Chicken Recipe

Lately, I have been experimenting with trying to get away from anything that comes out of a can. I grew up with a mom who was a great cook, but as anyone knows if you have parents that grew up during the industrial age. When big food corporations were taking shape. You have some experience with being fed sauces out of can. One thing I know she loved to make was baked cream of chicken, which was always delicious and still one of my favorite meals to this day.

I love some cream of chicken over some rice or whipped up with a batch of broccoli and cheese casserole…..Yummy! 😉 😉

When I cook depending on what I'm making, I will usually not measure.

I've learned to cook by using my five senses, you know. Taste, Sight, Smell, Touch…etc

Cooking is something that can be changed and altered based on your own personal preferences. So feel free to change up the recipe as you would like and add or remove what you deem necessary.

Ingredients:

1/4 cup of flour

I like my sauces a little thick, so that I'm able to use it as gravy later on if I choose too, depending on what I'm making.  So use less flour if you need too.

1 cup of  Organic whole whipping Cream

2 cups of homemade chicken broth, sometimes I supplement with Bone Broth just to get more minerals for the kids.

4 tablespoons of Butter

1 Tablespoon of olive oil

Pinch or two of Real Organic Sea Salt

Pepper to taste

Simply Organic All Seasons Salt

I like to use Emeril's Poultry Seasoning, just a dash, though.

2 garlic cloves

 

I like my sauces a little thick so that I'm able to use it as gravy later on if I choose too, depending on what I'm making.

The first thing is to chop the onions, garlic, while you prepare the other ingredients. You then need to add some olive oil to the pan and sweat the onions and garlic out in the pan on medium to high heat.  Then add the butter to the pan, once melted add some flour based on how thick you want it. Add a little more or a little less. The butter will form in a paste or a roux which gives the sauce a  nice consistency. Some people use cornstarch or arrowroot to thicken their sauces.

I like to use plain organic white flour.

Do not burn the roux.

Once mixed in add your seasonings to it. I like to add my seasonings into the roux, In my head, I think the flavors develop a lot quicker this way. 😉   But you can add the seasonings in after the liquids, its up to you. You can then add the 2 cups of chicken broth or bone broth.  Adjust to taste from here, based on your preferences.

Whisk Briskly!

You can then add the cream a little more salt and pepper, from here just let it simmer a little to let the flavors blend well together. Once done you can store in mason jars in the fridge, or any containers that you would like to use in the future.

I'm on a mission to get away from cans as much as possible, right now I'm about 90% off the can and the other 10 I'm working on it.

Co – Sleeping: Yes We Do It.

There so much hoopla about why you should not co sleep and how it can be harmful to the baby, and cause your kids to not want to sleep on their own beds when they get older.

Hey, I'm a co sleeper and love it! I grew up co sleeping with my own mom and grandma so  it only seems natural to pass it on to my kids.  Co sleeping draws families together and creates that closeness that bonds each family individual.

Co sleeping for some families is where they have one bed in which they all sleep in it. However, each of my children has their own room, or they share one. For all of their own things.  However, if the kiddies don't feel like sleeping in their own room one night, I don't force them not to, I can lay with them in their own bed, or a lot the times the little ones sleep with us, even the dog…..

It is a controversial topic that is gaining more and more support. I chose to co-sleep because it something that I grew up doing. Than when I had my own children , it was easier to breastfeed the babies and get some rest all at the same time.

There are many arguments against co-sleeping, however one could easily find fault with these arguments.  Many of the arguments address potential problems, such as not sleeping with your child if you have been under the influence of drugs or alcohol, not allowing a toddler to sleep next to an infant, and not sleeping with your child if you suffer from sleeping disorders.  These obstacles are rare or can be overcome with a little creativity or planning.

Most parents who do choose to co-sleep are very responsible adults who choose to sleep with their children to reap the many positive benefits, such as the bond it creates between a parent and a child, the positive sleep pattern it allows into their lives, the ease of breastfeeding a child in the middle of the night.  All of these things paint a wonderful picture of a positive parenting relationship between parent and child.

Co-sleeping is a natural way of taking care of our children that our ancestors did for many years.  The mothers of children for many years even carried their children around with them throughout the day, never allowing their infant to even leave the comfort and closeness of their bodies during the daytime, much less during the night.  This begs the question, “If it’s not broke, why fix it?”  If this process worked for so many years before us, then why do we question it so quickly today?

Co-sleeping might not work for everyone, but it is definitely something that should be considered as a positive parenting technique and as an opportunity for a restful nights sleep to be had by all.  If you do decide to co-sleep especially with an infant, there are some precautions to consider.  Do not use heavy bedding, as the infant can suffocate.  Do not allow the infant to sleep on the outer edge where falls can occur.  Investing in bed rails might be a good idea.  Make sure your mattress is on the firm side so that the surface your baby sleeps on is as level as possible. This will help everyone get a restful sleep if they are not tossed when the person next to them turns.

Summer Reading Activites.

Reading over the summer

Well the summer has arrived and many parents that are homeschooling their kids are taking the summer off. I plan on doing a mixture a both. I decided that the first two weeks the kids will have off. They will also have one week each month to go to a summer camp and be around other kids and do some fun things. Which are both educational and fun!

This is my first year homeschooling, so I did not want to burn myself out, or make my kids feel like they will not have much of a summer by constantly doing school like things.

So we came to agreement, on incorporating reading, writing, math, into the weeks of summer with out it feeling monotonous or drudgery.

Like I said before, the first two weeks will be off to do whatever. Than after that we will do a little bit of math, writing and reading school related things every other day. Not a whole lot, just enough to keep them moving. Kids have to know that reading is a lifelong thing and should be embraced. They will have silent reading everyday to themselves, and of course I will still read to them everyday out of our readers that I have chosen as a group thing.

Reading as family is fun, and the kids love it. They learn all at the same time without even knowing it!

The reader that  I am reading to them right now is the Who was Albert Eienstein book. If you have not read any of these books they are so cool. This is my first one from the series in which they have a ton.  The kids are ready to dive in, they are both educational and based on real historical people through out history.

I picked up a couple at a Scholastic Book fair in my neighborhood recently, If you have not been to one you should go. You can visit their site to get the info and get a fast pass. Which allows you get a ton of books at less than wholesale value.

Anyhow, lets get back to the point. It is important to keep our children's brains active over the summer months, so they don't lose their place in academics. This is big one for me, since I have son that I brought home to home school since he was getting behind, really behind in comprehending things at the school rate of doing things.

Studies have shown that children fall three months behind in the learning progress they've made when they don't do anything in the summer to keep up. Staying academically active in the summer doesn't have to be dry and boring, though. There are many creative ways to keep the wheels in your child's brains rolling!

One thing that we have incorporated into our spiritual reading activities is to read the story first than right after once a week we dress up and act out the story like a play. The kids not only love it, it uses all multiple intelligences of learning which leaves a lasting imprint on the child's mind.

Next, take turns where the kids get practice in reading out loud to the family, this teaches them proper public speaking along with learning how to pace themselves through their reading out loud for a crowd.

Second have the children work together on writing books of their creative initiative. Use note-booking to help them with this . Note-booking is one thing that we have been using more and  more the past couple of months. They are  learning how to read, write,and create all at the same time.

Third, use computer based programs to keep the kids active with reading. My youngest two are using Reading eggs and ABC Mouse  to keep up with reading , their having  fun and learning which is the whole point. I will have a review up soon on Reading Eggs.

We Love it!

Children can get together with a small group of friends and write a storybook. They can do so in a round robin way, where each child writes some and then passes it to the next for their turn. Or they can collaborate as they go along. When they are finished writing the story, they can work on some illustrations. They might even have fun finding pictures in magazines to use for the illustrations. They can put it all together with some cardboard pieces for the book cover. They will probably need your help with that part, as it will be hard to cut. When it is all done, they can take turns keeping the book each weekend to show grandparents and whoever else they would like to show it off to.

And of course, don't forget your public library's summer reading program. It is a great initiative to keep your kids interested in books. They can choose their own books to read for the programs and that is a big deal. It is not only fun for the child, but, it really helps to keep their desire to read going strong. The child who is always told exactly what to read sees it as nothing more than a chore. The library's programs usually all have prizes for certain numbers of books read – and then main prizes at the end of the program. And a lot of the programs have a kick-off party and a party for when it's over, too.

One program that we are getting to read is Pizza Huts Book It program.  That is going to be in the Fall though.

We don't eat a lot of bought pizza around here, only homemade but every now and than I give in to the kids and their dad's selfish cravings. Right…

So many kids fall behind, just from the gaps that happen over the accumulated summers. It can be really hard to catch up when school starts back up in the fall and by the time the child reaches middle school, they may be several grades behind in reading alone.

Which is something that I dealing with right now with my oldest son.

We don't have to make kids' summers all work and no play, but, keeping their brains in operation is imperative for them to  learn that learning is fun and life long.

One Degree Bread: Veganic Ancient Whole Wheat

This past week or so I have been trying out One Degree Bread which is their Veganic Ancient Whole Wheat Bread. The bread is sprouted,  gluten free, GMO free, and sweetened with raisins. I love trying out new breads and I ‘m trying to avoid the ones with out all those processed ingredients. I mean really who wants to eat all that crap. Than with a son who who has food intolerance issues trying out new stuff is always on my radar. I bought the bread from a local health food store the same place that I get my shampoo from.  I always get my locally grown organic vegetables from there and my grass fed beef and any other items that they have on sell there, without having to drive cross town to Whole Foods.

The benefits  of sprouted grain go way back all the way to ancient peoples eating sprouted grains, rice,  and bread. Refined grains which is what most people eat,  do not know that the germ and the bran are removed. To help with the preservation of the product to and from different locations. However refined grains lead to obesity, stroke, heart disease and even certain cancers of the GI tract. Refined grains do not break down well and are harmful to the body.

 

When grains are spouted the nutrition stays and the plant enzymes stay in tact . This helps with cleansing  of the colon, building healthy bacteria in the gut and overall it breakdowns slow in the body without causing a spike in blood sugar. Sprouted grains are high in protein  and  antioxidants. They also contain a plethora of  Vitamin A, C, phosphorous, potassium and Iron.

Who doesn't want  that, I know I can always use an extra dose of iron. …..

My little one deals with constipation if he is not eating clean on a constant basis. A lot the of times I just don't give  him bread unless it is  something I feel he will do well with. So I made him a turkey and cheese sandwich made with the One Degree Bread. He loved it! He only had half a sandwich but it was great! The bread was hearty, tasteful, with plenty of flavor. Most of all it was soft!

 

Let's be honest sometimes if you make your own, something I will be venturing into soon.Or if you try to buy brands with other healthful qualities they can be sort of hard, and just too thick.

Yuck..

So as you can see, it has a ton of great benefits. Sprouted is not the only type of bread I am experimenting with. I working on some soaked breads and sourdoughs too. But that's for a later post.

I like the Organic One Degree Breads so far and will continue to try more in the future!
