I have to admit it! I finally have been able to master the technique of healthy homemade Mayonnaise. Making and attempting to make mayo has always been quite a tricky thing for me. The one reason I think I always seemed to never get it quite right was because I was using a food processor and trying to make it really slow. When it comes to cooking, I really don’t have a lot of patience to make things that require tedious handling. Such as dripping the oil into processor really, really slow.
I mean really, who wants to do that?
The technique that I use requires that you use a large glass jar, wide mouth so that you are able to stick the emulsifier stick blender in. The one that I use is the Hamilton Stick Blender. I only use a small amount of ingredients and not much is required at all.
- 1 egg ( I use one egg, because I like to make fresh batches frequently) You can also add some whey to it, so it can lost longer and give it a gut friendly fermented on effect on your health.)
- I use about a 3 teaspoons of lemon juice no seeds.
- 2-3 teaspoons of salt ( fine ground)
- You can add some digon mustard, but that would be up to you.
- 1 cup of Oil I like to use a extra light tasting olive oil.
The thing I like to do is make sure I use a room temperature egg, that I get straight from the farm. I don’t trust big companies when it comes to quality eggs, not only because of germs but mainly because of how they handle the chickens and what they feed them.
Buying eggs from a farm will give tens times more nutrients. Check out this Video if you want more info.
Anyhow, the next thing I do is I pour the egg into the jar, with the cup oil, lemon juice and salt. I wait a couple of minutes until all the oil has had a chance to float to the top, and the egg is on the bottom. I place the stick blender in the jar all the way to the bottom. I turn on the blender and keep it in place and blend until it starts getting thicker. Really fast you will see the mayonnaise rise to the top. Slowly raise the blender out an blend more if needed.

Thank you for that post. i had come to believe that the only way to have a decent egg was to raise the chicken yourself, but if there are farmers out there that can offer superior eggs, tell the truth and the chickens are taken care of, treated well, and live well, then
i am all for patronizing that.
